HOMEMADE BREAD - AMISH STYLE
Pine Tree Post | Baking
Inspired by Elizabeth Coblentz's The Amish Cook cookbook (see Matt's book review), Matt copied down a simple sounding bread recipe. So, late last weekend Matt and Olivia were throwing flour, yeast, and other ingredients around the kitchen attempting to make a loaf of bread.
IT WAS A SUCCESS!
The Recipe:
1 package of active dry yeast
1/2 plus 2 cups of warm water or milk
1 heaping tablespoon of lard or shortening
2 tablespoons of sugar
1 tablespoon of salt
7 to 8 cups of all purpose flour
Dissolve yeast in a 1/2 cup of warm water.
Mix lard, sugar, salt, 2 cups of water.
Stir in flour until soft, elastic dough that does not stick to sides of bowl.
Cover dough and let rise until doubles in size (1 hr to 1.5 hrs).
Punch up the dough, divide into 2 balls. Form 2 loaves in greased loaf pans.
Let rise, again, until doubled in size (45 mins to 1 hr)
Bake 325 for 45 mins.
Yay for bread baking success. Looks like it turned out great! That book looks great too, might have to check it out. Thanks for sharing.
